Mmm...Potatoes, this is one of the vegetable which my son loves to always have. I always used to make this potato fry and roti for his lunch box . No doubt that the lunch box will come empty.
Ingredients:
- Potatoes - 250 gms
- Onion - 1
- Garlic - 2
- Curry leaves - 10 leaves
- Chilli Powder - 1 ts. p
- Coriander powder - 1 1/2 ts. tp
- Turmeric powder - 1/4 ts. sp
- Salt to taste
- Oil - 2 ta. sp
- Boil the potato to 3/4th cooked. Discard the skin and cut them into small cubes.
- Heat oil in a wide open frying pan, add mustard seeds, when it starts crackling add the onions , crushed garlic and curry leaves. Saute them .
- Drop in all the potatoes, powders and salt . Mix them well.
- Keep the flame on Medium and let the potatoes be cooked for 1 minutes.
- Mix them well and leave them for another minute.
- Repeat this until all the potatoes turn brown .
